Want to get a real taste of Middle Eastern Cuisine, then you gotta try Kabsa.   This is a rice and chicken dish that is unlike any other you’ve tried before.  Exotic spices combined to make this amazing dish.  Check my video to get a step by step tutorial.  In the meantime check the directions below.

Yemeni Kabsa (serves 2-4 people)

Yemeni Kabsa

  • Ingredients

  • 2-4 Whole Chicken legs
  • 1 large onion
  • 2 cloves garlic
  • 1 Tablespoon Yemeni Hawaij spice mix (available on amazon)
  • 1 Teaspoon Supreme Red Annatto for color
  • 2 bay leafs
  • 2-3 dried lemons
  • Dash of cinnamon
  • Dash of salt and pepper for taste (No shown in video but I added lol)
  • 1 can tomato sauce or half cup crushed tomatos
  • 1 1/2 cup water
  • 1 cup of Basmati rice
  • 1 large cast iron pan

Directions

Heat cask iron, when hot add oil chopped onion and garlic. Brown the onion and garlic and then add each spice to the chicken pieces skin down to brown. Begin to add all spices to chicken. Flip chicken when it starts to brown and add spices to the other side of chicken. Add tomato sauce, tomato paste, some water and mix all together. Add about another 1 1/2 cup of water and let all ingredients simmer for about 5 minutes. Add the cup of rice, add the dried lemons, and cover. Cook covered in the oven at 375-400 for 35 minutes. Lightly toast pine nuts and golden raisins for garnish. Take out the oven, add pine nuts, raisins, and chopped parsley and serve.
